Preheat oven to 350°F (175°C).Oil a 12-cup muffin pan.Mix game cake ingredients together.Fill muffin cups 3/4 full.Bake for 30 minutes.Cook shallots in oil over high heat.Add wine and reduce by half.Stir in mustard and demy-glace and cook 2 minutes.Stir in cream and basil.Serve cakes with sauce.

Preparation

Preheat oven to 350°F (175°C).

Cook shallots in oil over high heat.

Add wine and reduce by half.

Stir in mustard and demy-glace and cook 2 minutes.

Serve cakes with sauce.
