Wash and pat dry your fresh herbs.
Remove herbs leaves from stem and chop finely.
In a clean ice cube tray, fill with chopped herbs. I like to make single herb ice cubes, so I have more range and variety depending on the recipes I want to make in the future. You can mix herbs together and place in ice cube trays if you would like.
Make sure ice cube trays are full of herbs but not too tightly packed.
Pour oil of choice or melted butter over your herbs until they are just covered and carefully place the ice cubes trays in the freezer. You can use a measuring cup to assist with pouring your melted butter or oil.
After the herb ice cubes are frozen solid, remove from the ice tray, place in a labelled resealable bag or tupperware and place back in the freezer. Remember that butter will freeze more easily and since it is solid at room temperature. Oil may take a little longer to freeze and does not tolerate being left out at room temperature as well. This means when removing from the ice cube tray and transferring to a resealable bag and tupperware, you have to move fast.
There are hundreds of recipes you can use your herb cubes in, whether that is in soups, stews, meats, dressing etc. A few examples of herb + fat combinations s with suggested recipes are as follows.
Parsley and butter - potatoes, mushrooms, other veggies.
Dill and olive oil - salmon and other fish.
Oregano and butter - pasta, veggies.
Rosemary and oil or butter - Basting steak.
