Preheat oven at 350 °F (180 °C).In a 9-inch cast iron pan, cook the bacon over medium heat for approx. 5 minutes or until crispy.Sauté the onion for a minute with the bacon.Remove from heat and set aside.In a large bowl, beat the eggs.Add the cheese, the herbs, the maple bread, salt and pepper and mix together.Pour the mixture onto the bacon-onion mix in the cast iron pan and cook the frittata at the center of the oven for 25 minutes or until golden. Serve hot or cold.
