In a bowl, soak the tomatoes in boiling water for 6 to 8 minutes, until tender.Drain, dry and chop the tomatoes finely.Add the other ingredients to the tomatoes and mix well.     light cream cheese
  • 2 Tbsp.
    (30 mL)
    sour cream or plain yogurt
  • 1/2 cup

    pitted and chopped black olives
  • 4 Tbsp.
    (60 mL)
    finely chopped red onion
  • 4 to 6
    slices of 6 grain bread plain or lightly toasted
