Preparation

Defrost haddock fillets

In a large frying pan, brown onion, green pepper and mushrooms 3 to 4 minutes.

Add tomatoes, bay leaf, Tabasco. Season. Bring to a boil and simmer 10 minutes.

Add fish, cover and cook over low heat 8 minutes.

Cook covered 10 to 12 minutes per inch (2.5 cm) of thickness.
