Melt 1 Tbsp. (15 mL) butter in a non-stick pan.Add corn, let cook until warm, about 2 minutes.Add cheese and cook until melted, about 1 minute.Tip corn and cheese mixture into a food processor.Blitz a few times until mixture is combined but still chunky. Set aside.In same frying pan, melt remaining 1 Tbsp. (15 mL) butter.Add garlic, shrimp and seasoning to taste.Cook until shrimp is pink and garlic is golden brown, about 3-5 minutes.Add chopped celery for last two minutes of cooking.
