Preheat the oven to 350 °F.In a large bowl, mash the banana with a fork and mix well with the egg, butter, cranberries, Riviera Coconut Milk Vegan Delight, brown sugar and vanilla extract.Add the baking powder, baking soda and salt and stir well.Then gradually mix the flour and the oatmeal, with the coconut and chocolate chips, then stir.Shape the cookies using a tablespoon of dough each on a parchment paper covered sheet and then flatten them slightly.
