To make the syrup, combine the water and sugar in a saucepan and bring to a boil. When the sugar is dissolved, remove the saucepan from the heat. Set aside.Heat the milk and syrup to 50-60°C and add the chopped chocolate.Whisk until chocolate is melted.Refrigerate until chilled.Prior to serving, blend the chocolate milk and banana in a blender until smooth. Add the rum if desired.Serve in chilled glasses.

Preparation
