Cherry Chipotle BBQ Sauce: Place ketchup, jam, Chipotle peppers and sauce, vinegar, garlic powder, smoked paprika, salt and pepper in a blender cup. Blend using and immersion blender until mixture is smooth. Set aside.Coffee Rubbed Burgers: Divide and mold ground beef into 8 equal patties. Season both sides of patties evenly with ground coffee, Cajun spice and salt and pepper. In a large bowl, toss onion and red pepper with oil to coat.Brush cut sides of hamburger rolls with melted garlic butter.Place onions and peppers in a grill basket or skillet and grill on high in preheated barbecue tossing frequently until softened and caramelized, about 15-20 minutes.Add burger patties to grill when onions and peppers are halfway cooked. Grill patties for 3-4 minutes on each side or until well done. Top patties with cheddar and grill buns in final 2 minutes of cooking.Dress burgers to taste with cherry Chipotle BBQ sauce, grilled onions, peppers, lettuce, and pickles.
