To prepare the cold brew coffee:Coarsely grind the coffee (French press coffee maker size) and place it a glass container or a french press coffee maker.Add water and mix well.Close the container tightly and let brew for 12 hours at room temperature.Filter the mixture using a coffee filter installed in a strainer, or simply press the plunger.You will obtain a cold brew coffee concentrate.Prepare the popsicles:Mix the cream, vanilla extract and maple syrup.Add half of this mixture (about 60 ml or 1/4 cup) to fill the bottom of 4 popsicle molds (about 13mm or 1/2 inch)Freeze until cream mixture is solidified (a few hours).Combine cold brew coffee concentrate, cold water and remaining cream mixture (about 60 ml or 1/4 cup).Add a few chocolate chips to each pan.Pour the coffee mixture into each pan. Insert a stick into each pan.Freeze the popsicles until they are completely frozen.Enjoy!Source: Barista
