Preheat the oven to 350°F (180°C).Brush the rack of lamb with mustard.Mix breadcrumbs with parsley and garlic; coat the meat with this mixture and put in a roasting pan.Sprinkle with melted butter.Roast 45 minutes to 1 hour, or until cooked to taste.Transfer rack of lamb to a serving platter and keep hot.Pour the beef consommé into roasting pan: over high heat, deglaze with a few minutes.
