Preheat oven to 400°F (200°C).
Cut sweet potato into cubes about 1? (2.5 cm) high by ½? (1 cm) wide.
You should have 24 cubes. Slice the leek ¼? (0.5 cm) thick.
You should have as many leek slices as sweet potato cubes.
Spread sweet potato, leek and bacon on a parchment-lined baking sheet.
Garnish with rosemary and season with salt and pepper.
Bake in the oven for 30 minutes, stirring a few times.
Once out of the oven, thread 1 potato cube, 1 cheddar cube, 1 leek slice and one piece of bacon onto appetizer picks.
Arrange on a serving plate and serve while still hot.
