Place apples in a large dutch oven and pour enough water overtop so apple pieces are submerged and add brown sugar.Secure spices and ginger slices in tied-off cheesecloth and add to the pot.Bring water to a boil, then reduce to a simmer. Cover and cook gently for 1 1/2 hours.Working in batches, pour water, and apple mixture through a fine-mesh sieve, squishing apples to release their pulp and juices. Discard the apple solids (or stir into oatmeal) and pour strained liquid back into the pot.Simmer for an additional 30-minutes, and add more water as needed to reach the desired texture.Serve warm with a cinnamon stick for garnish.
