Caramel and coffee sauce
In a small pot on medium, heat all the ingredients except the coffee until it begins to boil. Stir frequently. Lower the heat and simmer for 3 minutes until the dates soften.
Pour into a blender and add the coffee. Pulse until you get a very smooth caramel.
Iced coffee
Pour the caramel coffee into 2 large glasses.
Add 1 cup (125 mL) of ice cubes in each glass.
Slowly pour the plant-based milk over the ice cubes.
Add 2 scoops of “ice cream” in each glass.
