Preheat BBQ to high heat. Brush, clean and oil the grills.
Brush turkey cutlets with 30 ml (2 tbsp) olive oil and season with salt and pepper. Cook for 3 to 5 minutes per side, or until internal temperature reaches 74°C (165°F). Set aside on a plate and cover with foil for 10 minutes.
In the meantime, in a bowl, combine mayonnaise, mustard, garlic, lemon juice, zest and parmesan. Season with pepper and set aside.
Brush bread cutlets with remaining oil and grill for 1 to 2 minutes, or until golden brown.
Spread mayonnaise onto grilled bread. Add lettuce, tomatoes, turkey cutlets and pancetta, if desired. Assemble sandwiches and serve immediately.
