Preheat oven to 350°F (180°C). Using a brush, dampen baguette with beer. Heat in the oven for 4 to 5 minutes and then freeze some 15 minutes.Cut semi-frozen baguette into thin slices to make crostini. Transfer to a baking sheet and bake 8 minutes. Set aside.Finely dice bison or beef flank steak. In a bowl, combine mayonnaise, capers, garlic, shallots and Espelette pepper.Stir in diced meat and season to taste. Spoon tartare onto crostini and garnish with chopped chives or parsley.
