In a skillet, heat oil over medium-high heat.Sauté beef strips on high heat to desired degree of doneness. Keep warm.Dip wrappers, one at a time, in warm water until soft. Remove from water.To make a roll, place some filling (beef strips, celtuce, green onion and coriander) 1/3 up from the edge of a wrapper.Fold the bottom up tightly over the filling, then side over tightly.As they are finished, transfer the rolls to a platter and cover with a slightly damp cloth.
