Chips :Preheat the oven to 200°C (400°F).In a large bowl, combine the tortilla wedges with the olive oil. Spread out on two baking sheets.Bake for 8 to 12 minutes.Chilaquiles :Heat half the oil in a nonstick pan.Cook the meat for 5 minutes (or until it is nearly cooked through). Add the seasoning. Cook for 1 more minute. Remove from the heat. Set aside.In the same pan, add the remaining oil and the onion. Cook 1 to 2 minutes.Add the kale and a bit of water. Cook for 2 to 3 minutes. Season. Remove from the heat.Place the chips in a large bowl. Add the taco sauce and black beans. Combine.Spread out on a baking sheet. Top with the seasoned beef and onion and kale mixture.Bake in the oven for 7 to 8 minutes or until the edges begin to crisp.Place on a plate. Top with the tomato and crumbled feta cheese.
