Turn on one burner of your BBQ to medium.Thoroughly combine the softened butter with the fresh rosemary or thyme and add the salt and a bit of freshly ground pepper.Pat the chicken dry with a paper towel, including the internal cavity.Rub a third of the butter over the walls of the internal cavity. Another third under the skin and the last third over the skin. (You can also rub half of the butter in the internal cavity and the other half on the skin).Open a can of Brasseurs du Monde wheat beer and remove 60 mL (1/4 cup) of beer.Slice the lemongrass stalks once lengthwise and as many times as needed widthwise to get pieces that are about 3 inches (7 to 8 cm) long. Place the lemongrass inside the can (and garlic if used). The beer might overflow a bit. Use a can opener to pierce a few holes in the top of the can.Hold the chicken up and insert the can inside the cavity. The chicken should be standing upright over the can. Place the chicken and can over a drip pan and make sure it remains balanced. Place on the grill over indirect heat. Close the BBQ lid and cook for about 45 minutes.Open the lid and rotate the chicken 180 degrees so it cooks evenly. Close the lid and cook for another 45 minutes or until a meat thermometer inserted in the breast reads 85 °C (185 °F).Remove the chicken from the BBQ and let cool, while still upright, for 15 to 20 minutes and then gently remove the can.Get rid of the can and its contents.Slice and serve immediately. Serve with a Gamme Sympathique wheat beer by Brasseurs du Monde.Note: Make sure you only use cans with labels printed directly on them. DO NOT USE any can with a paper, plastic, or shrink wrap label.
