In a small bowl, combine Heinz burger sauce and Mayoracha and maple syrup. Remove 2 tbsp to a large bowl and add shrimp, cornstarch and crushed tortilla chips; stir to coat shrimp. Place shrimp in the basket of an air fryer and cook at 400F for 6 minutes or until shrimps are golden. Alternately, place shrimp on a baking sheet lined with parchment paper and bake in the oven at 400F on convection for 6-7 minutes.
Heat a cast iron skillet over medium high heat and sear/toast the one side of a tortilla on the skillet for 20 seconds while brushing the top side with 1 tsp (5ml) of sauce. Flip tortilla onto sauced side and cook further 20 seconds or until tortilla is golden brown with char spots. Repeat with remaining 7 tortillas.
Divide lettuce and cabbage evenly among tortillas, sauced side up; top with cooked shrimp and garnish with cilantro and green onion. Serve with remaining sauce.
