Preheat the BBQ to 400°F.
For the meat mixture:
In a bowl, combine all the ingredients. If the mixture is too liquid, add Panko bread crumbs.
For the assembly:
Use your hands to shape the meat into a ball and skewer it with a citronella stick. Shape the meat around the citronella stick.
Use a brush to coat the pieces of meat in coconut oil.
Place a reusable grilling sheet on the BBQ. Cook the skewers for about 15 minutes while regularly flipping them.
Enjoy with the sweet chili sauce.
