Grease a 9x13-inch baking pan with coconut oil. In a large deep mixing bowl, combine eggs, apple sauce, maple syrup, vanilla, cinnamon, ginger, nutmeg and salt. Whisk or blend with an immersion blender until combined. Whisk in milk.
Cut each slice of bread in half diagonally and arrange into 2 shingled rows in prepared baking pan. Pour egg mixture evenly onto bread and let soak for at least 1 hr or overnight.
Preheat oven to 350F.
Toss apple slices with lemon juice and arrange in fan clusters partially tucked into soaked bread. Sprinkle with walnuts, sugar and cinnamon.
Bake 35-45 minutes or until golden and puffed. Serve with maple syrup.
