Preheat the oven to 350°F/180°C.Peel the apples, then slice them crosswise, saving the core (don’t keep the bud and stem ends).Delicately remove the seeds without damaging the apple slices.In a 9 inch (30 cm) aluminum frying pan, melt 1 Tbsp. (15 mL) of butter over medium heat.Brown a third of the apples, about 3 minutes per side.Remove and set aside.Repeat two more times with the remaining butter and apples.When all of the apples are golden, remove the pan from the stove.Sprinkle the bottom of the pan with brown sugar.Then, choose the 7 best-looking apples slices and lay them out attractively on the bottom of the pan.Add the rest of the apples. Set aside.In a large bowl, mix the flour, baking soda, baking powder, cornstarch, ground almonds, salt, and cinnamon.In another bowl, mix the yogurt, eggs, sugar, and vanilla extract.Make a well in the centre of the dry ingredients and pour in the egg and yogurt mixture.Mix with a wooden spoon until well combined.Pour the batter over the apples, then place in the preheated oven for about 20 minutes.Remove from the oven, let cool for 5-6 minutes, then turn the cake out onto a plate (the apples will now be on top).Serve immediately.
