Preheat oven to 400°F (200°C).Spray 2 muffin cups with cooking spray.Cut crusts from bread; using rolling pin, roll to flatten bread slices slightly.Press bread into muffin cups; bake for 12 to 15 minutes or until crisp and golden.Let cool in pan.Toss lettuce, tomatoes, cucumber and feta with dressing.Serve in bread cups.Tip:Pack the dressing on the side for a portable salad.

  • 6
    cherry tomatoes, halved
  • 1/4 cup
    (60 mL)
    chopped cucumber
  • 2 tsp.
    (10 mL)
    crumbled feta cheese
  • 2 tsp.
    (10 mL)
    italian dressing

Preparation
