Gardein Chick’n veggie bowl
- 6 Gardein 7 Grain Crispy Tenders
- 1⁄2 sliced avocado
- 3 cocktail tomatoes; slice each into 4 pieces
- 1⁄2 cup (125mL) thinly sliced purple cabbage
- 1⁄2 cup (125mL) steamed broccoli florets
- 1⁄2 cup (125mL) cooked quinoa
- 1⁄2 medium carrot, grated/julienned Carrot
- 1⁄2 cup (125mL) cooked edamame beans
- 1⁄2 orange bell pepper, thinly sliced
- 2 lime wedges
- 375 mL (1 1⁄2 cup) canola oil
- 80 mL (1⁄3 cup) rice vinegar
- 60 mL (1⁄4 cup) VH® Lite Soya Sauce
- 60 mL (1⁄4 cup) maple syrup
- Prepare Gardein 7 Grain Chick’n Tenders, quinoa and edamame beans according to package directions.
- Thinly slice the purple cabbage, carrot and bell pepper. Cut broccoli into small florets and steam until tender. Slice half of an avocado to desired size.
- Combine vegetable ingredients in a bowl. In a separate small bowl, combine the canola oil, rice vinegar, VH Lite Soya Sauce and maple syrup to create the dressing.
- Top the veggie bowl with Gardein 7 Grain Crispy Tenders. Drizzle with the all-purpose dressing and serve with lime wedges.
