Storytelling singer-songwriter William Prince is a member of the Peguis First Nation who grew up sleeping under DJ tables at community halls. Music is in his blood, and winning the Indigenous Music Album of the Year at the 2017 JUNO Awards for Earthly Days is just icing on the cake in a career filled with accolades and awards.
As the largest metropolitan city in Northwest Ontario, Thunder Bay is bursting with local bands and an original music flavour. To select top local artists to perform for guests, Metro worked with Coalition’s Incubator Project.
The Homegrown event featured none other than Thunder Bay’s very own Jean-Paul de Roover, a solo artist described as a sonic architect. His one-man band combined folk, rock, electronica and a cappella for a final product as unique as he is.
And surprise! Jean-Paul was joined on stage by JUNO award-winning artist William Prince for a performance guests will not soon forget!
Natural beauty and abundant resources are the norm in Thunder Bay—so where better to celebrate homegrown flavours than in Kakabeka Falls Provincial Park? Home of the second-highest waterfall in Ontario, this picturesque park spans over 5 kilometres and features some of Canada’s oldest fossils. In fact, some date back an astonishing 1.6 billion years!
Kakabeka Falls is also a popular camping spot for families across Ontario. That’s why it’s such a great setting for a picnic party! Along with his folk, rock and a cappella sound, Jean-Paul will be joined on stage by—surprise!—a JUNO-nominated artist for a truly unforgettable experience.

Pre heat oven to 400°F (204°C).
In a food processor add all ingredients except wonton wrappers, egg wash, soy and honey.
Pulse 10 to 20 times or until all ingredients are combined and mixture is smooth but sill retains some texture.
You’re not looking for a puree, more a thick paste.
Layout wonton wrappers and brush edges with egg wash.
Add around 1 Tbsp. (15 mL) of chicken mixture to each wrapper.
Bring opposing points together and press, then lift remaining 2 points and secure.
Rustic is fun, and because we’re baking them they wont fall apart if they’re not perfectly secured (like they would in a deep fryer).
Place wontons on foil lined baking tray, bake for 20 to 30 minutes or until wrappers begin to turn lightly golden.

Heat oven to 400F.
Melt butter and olive oil in a large pan over medium heat. Add onions, sugar and a good sprinkling of salt and pepper. Cook onions, stirring often, until golden brown, about 15 minutes. Add mushrooms, thyme and basil to pan and cook, stirring often, until mushrooms are golden brown and tender, about 10 more minutes.
Line the bottom of an 8” round baking tin with parchment paper. Scrape the mushroom mixture into the pan. Top with puff pastry, tucking edges into pan. Place in the oven and bake until pastry is golden brown, about 30-35 minutes. Remove from oven and let cool 5 minutes. Invert onto a plate. Garnish with extra herbs.

In a food processor blend basil, walnuts, garlic, lemon zest, olive oil, maple syrup and salt until a pesto consistency is achieved. Set aside.
On a large serving platter place tomatoes, onion and Bocconcini, spoon over basil mixture (I find this recipe makes more basil mixture than required for this but dress to your own taste).
Drip over balsamic vinegar.
Finish with fresh cracked pepper and a good quality flaked finishing salt (Maldon or Kosher).

In a food processor pulse mint, pistachios, maple syrup and cinnamon until a pesto like consistency is achieved. Set aside.
Lay out fruit on a serving platter, drizzle over pesto mixture (amount to your desire).
Add a few more drops of maple syrup if desired.
