Brush or spread about 2 Tbsp. (30 mL) of tomato sauce on each tortilla.Starting at one end of tortilla, place 2 slices Yves Veggie Bacon next to each other, lengthwise.Top with 2 Tbsp. (30 mL) cheese.Start at same end of tortilla and roll tightly.Refrigerate until ready to serve. If preparing a day ahead, wrap in plastic.Place a piece of foil on a cookie sheet. Remove plastic wrap from tortillas and bake in 350°F/180°C oven until cheese is melted, about 12 minutes. Remove from oven and cut into 1 in. (2 cm) rounds.

  • 1/2 cup
    (125 mL)
    cajun or spicy tomato sauce
  • 8
    canadian veggie bacon
  • 1/2 cup
    (125 mL)
    grated low fat or regular mozzarella or soy cheese
