Preheat oven at 375°F (190°C).Mix ground veal with onion. Salt and pepper. Make four patties and trim with bacon. Let sit for 2 to 3 minutes.For the sauce, lightly brown garlic, onion and fines herbs in oil. Add salt, pepper, sugar, tomato paste and tomatoes.Let simmer for 10 minutes over low heat. Use food processor to blend to smooth consistency.Serve veal patties with sauce, potatoes and beans.
