Bechamel Sauce:
In a small saucepan, melt the butter over low heat.
Add the flour and cook at medium heat until golden brown.
Add the milk and whisk to obtain a smooth consistency.
Add the salt, pepper and nutmeg. Simmer for 5 minutes
Croque-monsieur:
Preheat oven at 350 °F (180 °C).
Spread a Tbsp. of bechamel sauce on each slice of bread and place the turkey on one of the slice.
Sprinkle the cheese on the turkey and close with the second slice of bread.
Top the croque-monsieur with 3 Tbsp of bechamel sauce and sprinkle 4 Tbsp. of cheese and the herbs.
Place the croque-monsieur onto a cooking sheet that has been covered with parchment paper.
Cook in the oven at 350 °F (180 °C) for 15 minutes or until the cheese is golden.
