Preheat oven to 350°F (180°C).
Peel the apples and remove the core from the bottom using a knife or an apple corer.
Rub lemon on the apples to prevent darkening. Set aside.
Prick a clove into each apple and place the apples standing in an oven ready dish with the cinnamon sticks. Sprinkle with nutmeg.
In a small saucepan, slowly heat the white wine and the maple syrup for 5 minutes without boiling.
Pour the hot sauce on the apples until they are halfway submerged in sauce. Cover and poach in the oven at 350°F (180°C) for approximately 45 minutes or until the apples are nicely tender. Baste with sauce occasionally.
Remove the cloves and the cinnamon sticks before serving.
To serve, place an apple on a plate and drizzle with sauce.
