*This recipe is prepared in a smoker. Warm smoking: 2 hours
Preheat the smoker according to the manufacturer's instructions, until a temperature of 77°C (170°F) is reached.
Add the type of wood you prefer to the smoker.
Place the brie cheese in a small baking dish or a brie pan.
Place the baking dish on the hot grill of the smoker. Smoke for 1 hour.
Add cheese curds and caramelized pecans to the brie. Continue smoking for 1 hour.
Remove the brie from smoker and drizzle with maple syrup. Serve with bread croutons.
