Preheat the oven to 425(f) degrees. In a large ovenproof skillet over medium heat melt butter.Add the apples, fennel, onions & lemon juice. Cook until the vegetables begin to soften, about 5 to 8 minutes.Add the maple syrup, thyme, all spice, salt & pepper. Toss until well coated.Transfer to the oven & roast for 15 minutes. As the vegetables roast, drizzle the salmon with olive oil & season with salt & pepper. Transfer salmon to the skillet & cook until the salmon is cooked throughout, about 10 to 12 minutes.
