Caramelized apples:
In a non-stick pan, bring the apples, maple syrup, and salt to a boil.
Simmer for about 10 minutes, until the apples are tender and caramelized.
Add the rum and cook for another minute. Set aside.
Pancake batter:
In a mixer, mix all the ingredients of the batter until you get a smooth texture.
In a hot, slightly oiled, non-stick pan, cook the pancakes one at a time.
Flip them so they are golden on both sides.
Serve with the caramelized apples, a bit of maple syrup to taste, and if you like, a bit of dairy-free whipped cream.
