In a deep fryer, heat oil to 340°F (170°C).
Cut potatoes into matchsticks about 1/4 in. (1/2 cm) thick.
Soak potatoes in cold water for 10 minutes.
Drain and pat dry (potatoes must be perfectly dry to prevent spattering).
Place matchsticks in fryer basket; make sure that the basket doesn't overflow.
Immerse in oil and fry 10 minutes or until golden brown.
Place fried straws on paper towels and blot excess oil.
