Heat the oil in a wok. Cook the garlic, ginger, and curry paste for 1 minute.
Add the coconut milk, chili pepper, lemongrass, kaffir lime leaves (if using), and peanut butter. Bring to a boil.
Add the ramen, broccoli, and bell pepper. Cover. Cook for 2 to 3 minutes.
Remove from the heat. Stir gently.
Serve in deep bowls. Garnish with peanuts, fresh cilantro, and lime.
