Preheat the oven to 180°C (350°F).In a mixing bowl combine the meat, tomatoes, oil, half the parsley, the onion, pepper, salt, paprika, allspice, thyme, garlic and cayenne pepper. Mix well using your hands or a wooden spoon.Divide the dough into 8 pieces and shape each one into a ball. Flour a clean work surface and roll each portion of dough into a circle about 13 cm (5") in diameter. Flour the circles lightly, cover them with a clean tea towel and allow them to rest for 10 minutes.After the dough has rested, take two circles and roll them as thinly as possible, flouring as needed to keep the dough from sticking. Don't worry if the circles aren't perfect - the pizza will still taste great. Place both pizzas on a parchment-lined baking sheet and spread 1/8 of the meat mixture thinly and evenly over the top of each one.Bake for 12 minutes or until the topping is cooked and steaming and the underside of the dough has begun to brown. Remove from the oven and cool. Repeat with the remaining ingredients.When all the pizzas are done, sprinkle them with the crumbled feta and top with 1 cup of lettuce and some of the remaining parsley. Serve flat, or invite your guests to roll them up!
