Preheat oven to 375°F. Grease a muffin tin generously with cooking spray.In large bowl, combine stuffing and sparkling water; let stand until absorbed, about 2 minutes. Add remaining ingredients; mix gently to combine. Spoon mixture into 8 wells of prepared muffin tin.Bake until centre springs back when lightly touched and tops are golden, about 30 minutes. Let cool in pan on rack for 5 minutes. Remove from pan and let cool directly on rack.Tip: Add in whatever veggies you have on hand.Makes 12 servings, 1 muffin each.
