In a bowl, sift flower and baking powder together.Add beaten eggs, milk and salt, mixing until batter is smooth. Refrigerate 1-2 hrs.In a non-stick skillet, pour 1/4°° cup (60 mL) batter. Cook about 1 min. over medium heat. Turn and brown other side 30 sec.Repeat 10-12 times. Keep crêpes hot.In a skillet, heat oil and cook garlic, onion and mushrooms until brown. Add ham and spinach and cook 1 min. Stir in cheese and season to taste.Put some of this mixture on each crêpe and roll it up like a cigar.

    vegetable oil
  • 2
    garlic cloves, chopped
  • 1
    onion, chopped
  • 2 cups

    chopped mushroom
  • 1 1/2 cups
    (375 mL)
    baby spinach
  • 2 cups
    (500 mL)
    strips of cooked ham or cubed cooked ham
  • 5 oz
    (150 g)
    brie cut into chunks

  • Salt and pepper to taste
