Preheat oven to 350 °F (180 °C).Tear off 4 sheets of aluminum foil.On each sheet of aluminum foil, place one codfish filet, sprinkle with oregano and top with a slice of lemon and 5 mL (1 tsp.) butter.Arrange the julienned carrots around the fillets and sprinkle with lemon juice.Fold the aluminum foil around the fillets to form a bundle.Put the bundles on a baking sheet and bake 5 to 8 minutes.Meanwhile, brown garlic in an oil and butter about 2 minutes.Add spinach and cook 2 minutes, stirring often.Serve codfish and carrots on a bed of spinach
