Place garlic, salt, pepper and lemon peel in bowl and crush together using the back of a spoon.Add lemon juice and olive oil and whisk together.Cut ingredients into quarters or dice them.Thread onto skewers, alternating ingredients.Preheat barbecue on high heat. Brush and oil grill.Grill skewers 2 to 3 minutes on each side, brushing with vinaigrette while cooking.Serve immediately along with remaining vinaigrette in separate bowl.

  • 1/2 tsp.

    black pepper
  • 1 tsp.

    lemon peel
  • 1/3 cup
    (80 mL)
    lemon juice
  • 2/3 cup
    (160 mL)
    olive oil
  • skewers

  • 1 1/2 lb
    (700 g)
    doré-mi cheese (plain)
  • 1
    sweet onion
  • 2
    yellow bell peppers
  • 3
    ripe Tomato

  • greek or pita bread

  • fresh mangoes
