Place the oven rack in the middle and preheat to 400°F.
On a clean surface, lower the dough to 3-4 mm thickness using a rolling pin.
With a 10 cm cookie cutter, cut out 4 circles of dough.
Place a sheet of parchment paper on a baking sheet, place the 4 circles of dough on it, and then cover with another sheet of parchment paper and a second plate.
Bake for 12 minutes, then remove from the oven by removing the plate and the parchment paper that cover the circles of puff pastry.
Peel the apples and cut into quarters of 1 cm (about 12 per apple).
In a non-stick skillet, heat half of the apple quarters in a medium-high heat. (15 mL) butter for 3 minutes on each side, then add 1 tbsp. (15 mL) maple syrup and caramelize quickly. Repeat with the second half.
Tip:
Sprinkle the still hot tarts of powdered sugar and smoked salt flower.
Serve with a fillet of cream, a touch of whipped cream or vanilla ice cream.
