Preheat the barbecue to medium.Oil the tournedos.Cook tournedos 3 to 4 minutes per side.In a frying pan, cook shallots and thyme 1 to2 minutes in butter/oil.Add the rest of the ingredients and simmer 2 to 3 minutes.Pour the olive sauce over the tournedos.

    extra virgin olive oil
  • 4 x 5 to 6 oz
    (4 x 150 to 180 g)
    beef tournedos
  • dry shallots, chopped

  • 1 Tbsp.
    (15 mL)
    fresh chopped thyme
  • 1/2 cup
    (125 mL)
    15% or 35% heavy cream
  • 12
    pecans, halved
  • 1 cup
    (250 mL)
    cut pitted, olive

  • Salt and pepper, to taste

Preparation

Preheat the barbecue to medium.

Oil the tournedos.

Cook tournedos 3 to 4 minutes per side.
