Sift together the flour and salt.
Work the lard into the flour until sandy (mix until it looks like breadcrumbs) with your fingers. Make sure that butter is fully mixed into the flour.
In another bowl, mix the eggs, vinegar and cold water.
Make a well in the centre of the flour mixture and pour in the liquid ingredients.
Work the mixture lightly until it starts to hold together. Do not over mix, or the pastry could become tough.
Shape dough into a ball and cover with a damp cloth.
Let stand in the refrigerator 30 minutes before rolling.
