In a bowl, mix tuna, salsa, corn, onion and coriander together. Season to taste.Spread mixture over 3 tortillas.In a skillet, heat a little oil and brown first tortilla 2-3 min. Cover with one third of the cheese and top with another tortilla. Flip. Cook for another 2-3 min. Repeat the procedure to make 2 more quesadillas.Cut each quesadilla into 8 pieces.

    water-packed pale tuna, flaked
  • 3 Tbsp.
    (45 mL)
    mild salsa
  • 12 oz
    (341 mL)
    corn kernels

    onion, chopped

  • Salt and pepper to taste
