Heat the oven to 375°F (190°C).Brush a 9 in. (22 cm) pie dish with 2 tablespoons (10 mL) of butter.Sprinkle the sides and bottom of the dish with the bread crumbs.Peel the apples and cut them into small cubes.Sprinkle with the lemon juice.Stir-fry the leeks and apples with the rest of the butter.Salt and pepper.Cook on low heat for 10 minutes, stirring occasionally.Make sure no liquid is left.Add the flour and mix well.Pour into the pie dish.Beat the eggs with the milk and half of the cheese.Pour this over the apple and leek mixture.Sprinkle with the rest of the cheese.Cook for about 30 minutes or until a knife inserted in the middle of the pie comes out clean.Remove from the oven and wait 5 to 10 minutes before serving.
