Pour apple juice into a large 8” or 10” inch skillet set over high heat and reduce to 1 cup (250ml); about 8 minutes. Remove from heat and let the juice cool to lukewarm.
Sprinkle gelatin evenly over cooled juice; allowing gelatin to absorb liquid for 5 minutes. Stir in lemon juice and maple syrup to combine.
Heat mixture over medium-low heat stirring gently until gelatin has completely dissolved.
Pour liquid into small silicone candy or chocolate molds. Chill gummies uncovered for 1 hour to set.
Unmold gummies and keep refrigerated in an airtight container for up to 2 weeks. (For chewier gummies, unmold gummies and arrange on a cooling rack uncovered to naturally dehydrate for 12 hours or overnight. Keep refrigerated in an airtight container for up to 2 weeks)
Makes about 60-70 bite-sized gummies.
