Homemade steak spice mixCombine all spices in a pan and lightly roast for about 3 to 5 minutes.Crush spices in mortar and set aside.Maître d’Hôtel ButterSlightly cut the top of the garlic clove. Brush the garlic clove generously with extra virgin olive oil. Season with salt and pepper. Wrap the clove in aluminum foil and cook on the BBQ on low heat for about 40 minutes.Cut the lemon in half. Brush green onions and lemon with extra virgin olive oil. Season with salt and pepper.Grill the lemon and onions on the BBQ over high heat until the skin is lightly charred. Finely chop the green onions and set aside.In a mortar (or food processor), add butter, juice from grilled lemon, blue cheese, chopped parsley, green onions, garlic clove and fleur de sel. Blend or process vigorously until smooth.AAA Angus BeefGenerously cover the pieces of meat with the spice mixture. Preparation

Homemade steak spice mix

Combine all spices in a pan and lightly roast for about 3 to 5 minutes.

Crush spices in mortar and set aside.

Maître d’Hôtel Butter

Slightly cut the top of the garlic clove. Brush the garlic clove generously with extra virgin olive oil. Season with salt and pepper. Wrap the clove in aluminum foil and cook on the BBQ on low heat for about 40 minutes.

Cut the lemon in half. Brush green onions and lemon with extra virgin olive oil. Season with salt and pepper.

Grill the lemon and onions on the BBQ over high heat until the skin is lightly charred. Finely chop the green onions and set aside.

Generously cover the pieces of meat with the spice mixture. Grill meat on BBQ over high heat until desired doneness.

Let meat rest for about 10 minutes for a tender and tasty texture.

Place butter dumplings on the hot meat when serving.
